I discovered a slightly off-beat way to grill the lamb chops though. Usually you would sear the meat first over direct heat then move to indirect heat. But, this recipe said to place over indirect heat first, covered with an aluminum tin foil pan for 4 minutes, then sear over direct heat. I did it. I cooked the chops over the direct heat for 2 minutes on each side and they were PERFECT. Medium rare, just how I like 'em. Give this method a try some time, I think you'll agree.
The chicken, I began on indirect heat then moved over to direct for another 25 minutes after the chops came off the grill. I think my tank is getting empty 'cuz the heat seemed to die down after awhile which was just fine by me. They look great so I'm gonna assume they'll taste as good as they look.
I also roasted up a head of cauliflower. Wow, is that good. Wash and cut-up the florets into 1/4-1/2" pieces. Place them in a bag with 3 tablespoons of olive oil (can use sesame seed oil for some zip), 1 tablespoon of minced garlic, 1 teaspoon of coarse salt & 1/4 teaspoon of freshly coarse ground pepper. Mix it up in the bag, place on foil lined pan & bake at 400 degrees for about 25 minutes or until they're browned and all liquid is evaporated. Delicious.
Got in a couple of water workouts this past week and did a friends "Rope & Rip" class. we did 3 bouts of 3 minutes of jump rope (actually, I swung the rope as I jogged in place. Not feelin' the love of jumping on my new knee.) followed by 4-30 second bouts on the Rip-trainer for a total body workout in between each jump rope session. It's gonna be a toughy workout. I was pretty pleased with myself at being able to do it with just the 1 modification.
Got my spin bike outside on the patio now since my bike cover arrived. I think it may be in Putneys' spot though, so I'm gonna need to move it a little. Poor Putney. And yes, I did take a dance class too. Movin' right along with my bad self.
Yuck! There's not a lot that scares me but if you know me, you know that anything with more than 4 limbs will do it. I realize that with Halloween right around the corner,one should expect to see icky, crawly things. Today,I saw (& killed) 2!
One Black Widow Spider and 1 Scorpion.
I did also find a lizard in my bathroom moments ago and rescued him. I got him outside but he was so squirrely that he lost his tail, which kept squirming after he had dropped it. That was a bit nasty. Him I didn't mind though. I like lizards.
